ABOUT OUR OMAKASE

Our Omakase pays homage to Choji’s passionate Yakiniku roots by using only the highest quality cuts of wagyu beef. With focus on the finesse of an Omakase experience, guests are taken on a discovery journey by leaving themselves in the trusted hands of the chefs. There is an important essence of the Japanese culture and story behind each dish that is showcased through the chef’s specially crafted menu.

Takashi Yamamoto

Chef Takashi Yamamoto is gaining his reputation as a remarkable chef who works magic with meat dish. His knife skills and astonishing mastery of Japanese cooking bring our guest through the very own Choji’s cultural and culinary experience.

Tomoyuki Matsuya

Born in a sushi restaurant-owned family, Tomoyuki learnt the art of Japanese cuisine from his father at a very young age. He is well-known for his amazing skills and his uniquely clever and exciting combinations of the freshest ingredients.

CRAFTSMANSHIP

Chef Tomoyuki Matsuya and chef Takashi Yamamoto, with deeply rooted Shokunin spirit, are dedicated to the mastery of the traditional art of sushi making and Japanese cooking. Their expert craftsmanship is expressed in the rice, the proportions, the slicing technique and the balances in flavour. Whether harmonizing the natural flavour or creating different contrasts in the textures of the dish, they build a partnership to bring the best produce together in a way that combines authenticity with modern innovation and creative flair.

FRESH INGREDIENTS

At Choji, we only source the finest local and imported fresh produce for our omakase. Every creation offered by the chefs is meticulously selected to accentuate the defining characteristics of the ingredients, which allow the diner to fully experience their nuances and intricacies. In keeping with our zero-waste philosophy, everything we source is used in some part of the dish, no ingredients go to waste.
